Canestrelli (Butter cookies)



Credo che i canestrelli siano fra i biscotti più buoni al mondo, secondi solo a quelli con le goccie di cioccolato
Ho provato a farli e.. subito ho dovuto rifarli, perchè sono finiti in un attimo
A quanto pare, il trucco per renderli così friabili è quello di mettere nell'impasto un tuorlo d'uovo sodo: è proprio un trucchetto fenomenale!
Ps. Io ho usato una miscela di farina 00 e fecola, perchè ho notato che così la frolla viene più morbida, ma la ricetta tradizionale prevede solo farina 00

Ingredienti per circa 30 biscotti:
- 1 tuorlo d’uovo, ca. 40gr
- 40gr di burro
- 20gr di margarina (oppure altro burro)
- 30gr di zucchero semolato
- 1 fialetta aroma alla vaniglia
- 60gr di farina 00
- 45gr di fecola di patate
- zucchero a velo q.b. per guarnire

Calorie: ca. 35 a biscotto
Grassi: ca. 20,72%

Preparazione:
Bollire l’uovo per circa 10 minuti per farlo rassodare, poi farlo raffreddare in una scodella piena d’acqua ghiacciata.
Sgusciarlo, separare il tuorlo dall’albume e tritare il tuorlo con una forchetta.




Lavorare a crema il burro con la margarina ed incorporarvi lo zucchero.




Aggiungere il tuorlo d’uovo e l’aroma alla vaniglia, mescolando bene.




Unire infine la farina e la fecola, poco alla volta, mescolando con il cucchiaio, fino ad ottenere una frolla molto morbida.




Avvolgere il panetto di frolla con pellicola da cucina e riporre in frigo per almeno un’ora.



Passato questo tempo, stendere la frolla all’altezza di circa mezzo centimetro e ricavare i biscotti con un tagliabiscotti.



Trasferire i biscottini su una teglia rivestita con carta da forno ed infornare a 180° per 15-20 minuti, fino a che la frolla non comincia a dorare (deve comunque rimanere piuttosto chiara).
Sfornare, lasciare intiepidire e cospargere con zucchero a velo.



Ingredients (30 cookies): 1 egg yolk (approx. 40gr), 40gr butter, 20gr margarine (can sub with 20gr additional butter), 30gr sugar, 1tsp vanilla extract, 60gr all-purpose flour, 45gr potato starch. Calories (per serving): 35 / Fats: approx. 20,72%
Directions: Boil the egg for approx. 10 minutes, then let it cool down. Peel off the shell, remove the egg white and grind the yolk with a fork. Beat butter and margarine with sugar. Add the yolk and vanilla extract, mixing well. Work the flour and starch into the batter with a spoon, until you get a soft dough. Let the dough rest in the fridge for at least an hour. Roll out the dough to a 0.5cms thickness and cut out the cookies with a cookie cutter. Lay the cookies in a tin lined with parchment paper and bake at 180° for 15-20 minutes, until slightly golden (they, however, must be quite light in color). Let the cookies cool down and dust them with powdered sugar.
