Sixteen (Plus 9) Candles - Nutella Cake

Questa torta è il regalo che mi sono fatta per il mio ultimo compleanno... un quarto di secolo si compie solo una volta nella vita, bisogna festeggiare, no?

In principio volevo fare la Sacher, ma ho cambiato idea perchè in famiglia fra diete, colesterolo alto, gastriti e intolleranze varie, una torta che contiene 5 uova e burro in quantità industriali è davvero improponibile!

Così ho dovuto cercare un compromesso: una torta si cioccolatosa, ma anche (relativamente) sana!
Cerca e cerca, alla fine ho trovato questa vera perla:
torta light alla Nutella!
Mi rendo conto che "light" e "Nutella" sono parole che difficilmente vanno insieme, ma questa ricetta è l'eccezione... non usa nè burro, nè uova, nè olio

Tanto per rendere la torta un po' più pasticciosa, l'ho farcita con della marmellata e ricoperta con uno strato di glassa morbida al cioccolato fondente (la stessa usata per la Sacher). Una goduria!

Ingredienti per 12 porzioni:
Per la base:
- 210gr di farina 00
- 50gr di fecola di patate
- 1 bustina di lievito per dolci
- 80gr di zucchero
- 350ml di latte parzialmente scremato
- 200gr di Nutella
- 320gr marmellata di albicocche
Per la glassa:
- 300 gr di cioccolato fondente
- 100 gr di burro
- 3 cucchiai d'acqua

Calorie: ca. 470 a porzione

Preparazione:
Setacciare e mescolare in una ciotola la farina, la fecola, il lievito e lo zucchero.



A parte, sciogliere la Nutella con il latte versato a filo.



Unire la Nutella sciolta agli ingredienti secchi, mescolando fino ad ottenere un composto lucido e fluido.



Versare il composto in una teglia rotonda (precendentemente imburrata e infarinata) del diametro di 22 cm.



Infornare a 150°C per circa 50-60 minuti. Per verificare la cottura, fare la prova stecchino: dovrà uscire appena appena umido, ma non bagnato.



Sfornare e lasciare intiepidire la torta per qualche minuto, poi sformarla su una gratella. Quando la torta si è raffreddata, tagliarla a metà..



..e farcirla con circa metà della marmellata di albicocche, precedentemente scaldata sul fuoco per renderla più fluida.



Ricomporre la torta e ricoprirla completamente con la marmellata restante. Lasciare riposare per almeno mezz’ora.



Nel frattempo preparare la glassa, sciogliendo a bagnomaria il cioccolato col burro e l’acqua, mescolando continuamente.
Versare la glassa sulla torta partendo dal centro e spingendola verso i bordi col dorso di un cucchiaio.



Lasciare raffreddare per qualche ora (eventualmente in frigorifero) e servire





Ingredients (12 servings): 210gr all-purpose flour, 50gr potato starch, 16gr baking powder, 80 gr granulated sugar, 350ml skim milk, 200gr Nutella, 320gr jam, 300gr dark chocolate, 100gr unsalted butter, 3 tablespoon water. Calories per serving: 470
Directions: Whisk together flour
potato starch, baking powder and sugar. In a separate bowl, combine milk and Nutella. Add the thinned down Nutella to the dry ingredients, stirring well until you get a smooth and creamy mixture. Pour the mixture in a round, 22cm wide, greased cake mold and bake at 150°C (approx. 300 F) for 50-60 minutes. The cake has to be moist. Once the cake has completely cooled down, slice it in half and fill it with part of the jam (you may want to heat the jam to make it thinner). Stack the layers and cover the whole cake with the remaining jam. Let it rest for half an hour. In the meanwhile, melt chocolate, butter and water over a bain-marie, stirring thoroughly until you get a smooth and shiny glaze. Pour the chocolate glaze over the cake, starting from the center and pushing it toward the borders with the back of a spoon.
